Eve Minson

Eve Springwald Minson – Director of Herbal Education, The Center For Discovery

Born and raised in N.Y.C., Eve left for greener pastures in 1987 to study plants, ecology and design at Cornell University, while building a greenhouse and gardening business, Paradise Gardens. She then moved to Bucks County to teach ecological landscape design at Delaware Valley University while farming part-time, at which time she combined her years of gardening, teaching, and design experience into her business, Just One Seed. In 2014 she moved back to the Catskills where she once enjoyed childhood summers, to join the Center for Discovery and bring her expertise to the farm-based therapeutic education program she manages at the Thanksgiving Farm and Community School and to grow biodynamic herbs. In her spare time she wanders the Catskills with her dogs looking for native plants, learning about medicinal herbs and always digging deeper, listening to the spirit of the natural world.
